You'll notice Mad Mick doesn't specify the type of chilli to be used in most of the chilli recipes. He's left it up to you to decide whether you want it hot, medium or mild. So if you want it hot, throw in a Naga or a Bhut (be careful), want it medium, try a white habanero, or like it mild well try a jalapeno or birds eye. Remember, if you want the chilli taste without most of the heat, remove the seeds and inner membrane. You get the idea.
