Pumpkin Soup Print Option

Mad Mick reckons pumpkin soup is the duck's guts (that means sensational if you're not used to Mad Mick's Aussie slang). Even though Mad Margo (Mad Mick's mum) makes the BEST pumpkin soup ever, Mad Mick reckons his is pretty good too, maybe better, who knows, sorry Mad Margo.

Makes about 6 serves.

Ingredients

1 kg of butternut pumpkin
2 large potatoes
4 cups chicken stock
350ml cream
Salt & pepper
5 slices white bread
1 handful of each fresh parsley and chives (Use dried if you can't get fresh)

Method

1. Roughly chop the potato and pumpkin into evenly sized pieces.
2. Dice the parsley and chives and set aside.
3. Put the pumpkin and potatoes along with the chicken stock, salt and pepper into a pot and simmer until vegetables are tender.
4. Cut bread into small cubes, place on a tray and place under a grill until light brown (keep an eye on them they'll burn quickly!).
5. Empty contents of pot into a blender (or use a stick blender in the pot) and blend until smooth.
6. Return to pot, add cream and heat through (Don't boil at this stage).
7. Serve into bowls, add croutons (the toasted bread pieces) and sprinkle over the diced parsley and chives.
8. Enjoy!
