Love short bread style biscuits? These Greek style short-breads will melt in your mouth and are a great morning tea snack with a coffee.

Makes about 25 biscuits.

Ingredients

250g butter
2 and a half cups icing sugar
2 teaspoons (the ones you stir your tea with) vanilla extract
1 egg (a chicken egg would be good)
2 and a half cups plain flour
1 teaspoon baking powder
Half cup almond meal (ground almonds)

Method

1. Pre-heat your oven to 160c.
2. Put the butter (make sure it's soft), one cup of the icing sugar and the vanilla extract in a mix master (you know the contraption you used to annoy your mom over to lick the beaters when she made a cake?) and mix until it is creamy.
3. Add the egg and mix until it is thoroughly mixed through.
4.Now get a sifter and sift the flour and baking powder over the mixture you made above at step 3.
5. Add the almond meal and mix it up until it is all combined.
6. Get a couple of baking trays and line them with baking paper.
7. Now, this is the hardest bit, get a tablespoon (the ones you eat your breakfast with) and spoon out some of the mix onto the baking paper so it looks like a little sausage about 10cm long and keep going until you've used all the mixture. Make sure you leave some room between each, they'll spread out when cooking.
8. Bend the little doughy sausages so they look like half moons.
9. Stick them in the oven for about 20 minutes or until they turn light brown.
10. Now, put the rest of the icing sugar into a bowl and while the biscuits are still warm, one at a time, roll them through the icing sugar until they are well coated.
11. These biscuits will store well in an air-tight container, after you've let them cool!
