Authentic home-made chicken stock Print Option

Shop bought chicken stock (or any stock for that matter) is no substitute for the real deal. Authentic home-made chicken stock can be used as a base for a heap of recipes, Mad Mick has given you two recipes right here that use chicken stock, Pumpkin Soup and Avgolemono.

Not only does it enhance the flavour it is dead easy to make. You also make use of the chicken carcass that you would normally waste and not give a second thought to. Beauty!

Any left over stock can be frozen for later use.

Ingredients

1 large chicken (You can use a chicken already cooked, or ask your butcher for a chicken carcass. They'll probably give it to you free).

Method

1. If using a cooked chicken, remove all the meat (Keep it for sandwiches, whatever, just don't throw it out).
2. Place the chicken carcass into a large pot and cover with water.
3. Simmer over a medium heat for about two hours.
4. Pour the liquid through a sieve and into a bowl.
5. Using a spoon, skim as much fat from the surface of the liquid as possible.
6. And that is all there is to it, your own authentic home-made chicken stock.
