Aioli is a garlic type sauce that can be served over vegetables, fish or can even be used as a dip. This is a fairly easy recipe as far as Aioli recipes go.
Makes about 1 and a 1/2 cups.
4 cloves garlic
2 eggs
1 cup olive oil
Half tablespoon (the ones you eat your breakfast with) white vinegar
Salt & pepper
1. Peel the garlic cloves and chop up as finely as you can. 2. Now, if you have a mortar and pestle, lucky you and use it here, otherwise put the garlic into a bowl add a pinch of salt and using a tablespoon crush it up until it looks like a smooth paste.
3. Put the garlic paste into a bowl, and with a whisk, or a fork, whisk it all up along with the vinegar and the yolks of the eggs.
4. When everything at step 3 is combined slowly add the oil in a fine drizzle, while you continue to whisk. Don't rush this bit.
5. Now, add a bit of salt and pepper to your liking and you're done.
